  • 2 small Bell Peppers (any sweet variety)
  • 1 large Red Onion (or white/yellow onion)
  • 1 cup Frozen Fire-Roasted Corn (or fresh corn)
  • 1 pound Boneless, Skinless Chicken Thighs (or chicken breast/tofu for vegetarian)
  • 1 cup Full-Fat Plain Greek Yogurt (or mayo/dairy-free yogurt)
  • 1/2 cup Cotija Cheese (omit for dairy-free)
  • 1/4 cup Cilantro (or parsley)
  • 1/4 cup Chopped Green Onion
  • 1 small Jalapeño (remove seeds for milder flavor)
  • 8 pieces Almond Flour Tortillas (or preferred small tortillas)
  • 1 wedge Lime (for serving)

Instructions

  1. Prepare Marinade: In a small bowl, mix chipotle powder, paprika, cumin, garlic powder, onion powder, kosher salt, and oregano. Toss the chicken thighs with half the olive oil and half the spice mixture. Let this marinate for at least 30 minutes.
  2. Preheat Oven: Turn on your oven and set it to 425°F (220°C).
  3. Prepare Veggies: Wash and chop your bell peppers and red onion. Toss them with the remaining olive oil and the leftover spice mixture until well coated.
  4. Roast: Spread the marinated chicken on a baking sheet and surround it with the seasoned vegetables. Roast everything for about 15 minutes.
  5. Chop Chicken: Allow the roasted chicken to cool slightly, then chop it into small pieces.
  6. Make Corn Mixture: In a mixing bowl, combine Greek yogurt, lime juice, spices, fire-roasted corn, and remaining garnish ingredients.
  7. Assemble Tacos: Warm your almond flour tortillas and layer with roasted veggies, chopped chicken, and corn mixture.
  8. Garnish and Serve: Top each taco with crumbled cotija cheese and an extra squeeze of lime juice.
