Ingredients

  • 1 tsp Kosher Salt
  • ⅔ cup Granulated Sugar
  • 1½ tsp Vanilla Extract
  • 2 cups All-purpose Flour
  • 1 to 2 tbsp Sparkling Sugar or Granulated Sugar (optional)

Instructions

  1. Preheat your oven to 325°F (163°C). Prepare an 8-inch or 9-inch square baking pan by lining it with parchment paper.
  2. Combine the softened butter in a large mixing bowl until creamy and smooth.
  3. Add kosher salt to the butter mixture. Stir in granulated sugar and vanilla extract until well combined.
  4. Incorporate all-purpose flour into the butter mixture. Mix gently until just combined.
  5. Transfer the dough into your prepared baking pan and press it down evenly.
  6. Bake until the edges are light golden brown, about 35 to 40 minutes for a 9-inch pan, or 45 to 50 minutes for an 8-inch pan.
  7. Cool the baked shortbread in the pan for 5 minutes. Cut it into squares, bars, or wedges while warm.
  8. Sprinkle the top with sugar while still warm. Let cool completely before serving.
