Ingredients

  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh or canned)
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper (adjust to taste)
  • 2 tablespoons honey or agave syrup
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add diced onion and bell pepper, and sauté until softened, about 5 minutes. Stir in minced garlic and cook for an additional minute.
  2. Add cooked rice, black beans, corn, chili powder, smoked paprika, and cayenne pepper to the skillet. Stir until everything is well combined.
  3. Drizzle honey (or agave syrup) over the mixture. Season with salt and pepper, and stir gently to mix.
  4. Reduce heat to low, cover, and let the mixture warm through for 5-10 minutes, allowing the flavors to meld.
  5. Remove from heat and garnish with freshly chopped cilantro before serving.
  6. Spoon the Sweet-Spicy Mexican Treat into bowls and serve hot. Enjoy!
