- ½ cup hot sauce (e.g., Frank’s RedHot)
- ¼ cup unsalted butter
- 1 tablespoon honey or brown sugar (optional)
- ½ teaspoon cayenne pepper (adjust to preference)
Instructions
- Pat chicken wings dry with paper towels.
- Combine flour, paprika, garlic powder, onion powder, salt, and black pepper in a bowl. Dredge wings in mixture, shaking off excess. Let rest for 10-15 minutes.
- Heat oil to 350°F (175°C). Fry wings in batches for 8-10 minutes until golden brown and internal temperature reaches 165°F (74°C).
- Remove wings and drain on a wire rack or paper towels.
- Melt butter in a saucepan over low heat. Add hot sauce, optional honey/sugar, and cayenne pepper. Stir until smooth and heated through.
- Toss fried wings in the hot sauce mixture until well coated. Serve immediately.
Notes
- For extra crunch, double-fry the wings: fry once, rest for 5-10 minutes, then fry again for 2-3 minutes.
- Reduce or skip cayenne pepper for milder wings.
- Serve with celery sticks and ranch or blue cheese dressing.
- Leftover wings can be reheated in the oven to restore crispiness.
