Ingredients
- 1 cup unsalted butter, melted
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon salt
- 8 ounces kunafa (shredded phyllo dough)
- ½ cup unsalted pistachios, crushed
- 1 cup sweetened condensed milk
- Syrup (for drizzling, optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 baking dish.
- Mix shredded kunafa with half of the melted butter. Spread evenly in the baking dish and press firmly.
- Bake the kunafa layer for about 15 minutes until golden. Remove and let cool slightly.
- Combine remaining melted butter, granulated sugar, and brown sugar. Mix well. Add eggs and vanilla extract, whisking until smooth.
- In another bowl, sift together flour, cocoa powder, baking powder, and salt.
- Gradually fold dry ingredients into wet ingredients until just incorporated. Do not overmix.
- Gently fold crushed pistachios into the brownie batter.
- Pour brownie batter over the baked kunafa layer, spreading evenly.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with moist crumbs.
- Prepare syrup by heating equal parts sugar and water until dissolved. Add lemon juice if desired.
- Cool brownies for 30 minutes. Drizzle with sweetened condensed milk and syrup. Sprinkle with additional pistachios.
- Slice and serve warm or at room temperature.
