Ingredients

  • 1 cup sugar (granulated)
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 2 cups flour (all-purpose)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups orange marmalade
  • 1/2 cup dark chocolate chunks

Instructions

  1. Preheat your oven to 350°F and spray an 8×8 baking dish with baking spray.
  2. Cream together the softened unsalted butter and sugar in a stand mixer until fluffy, about 2-3 minutes.
  3. Mix in the two large egg yolks and vanilla extract until smooth and creamy.
  4. Combine the flour, baking powder, and salt into the mixture until just blended.
  5. Press half of the shortbread mixture into your prepared baking dish to form a solid base.
  6. Spread the orange marmalade generously over the shortbread base.
  7. Top with the remaining shortbread mixture and finish with dark chocolate chunks.
  8. Bake for 30-35 minutes, or until lightly browned on the edges.
  9. Cool completely before slicing into squares.
