- 1 cup sugar (granulated)
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 2 cups flour (all-purpose)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/2 cups orange marmalade
- 1/2 cup dark chocolate chunks
Instructions
- Preheat your oven to 350°F and spray an 8×8 baking dish with baking spray.
- Cream together the softened unsalted butter and sugar in a stand mixer until fluffy, about 2-3 minutes.
- Mix in the two large egg yolks and vanilla extract until smooth and creamy.
- Combine the flour, baking powder, and salt into the mixture until just blended.
- Press half of the shortbread mixture into your prepared baking dish to form a solid base.
- Spread the orange marmalade generously over the shortbread base.
- Top with the remaining shortbread mixture and finish with dark chocolate chunks.
- Bake for 30-35 minutes, or until lightly browned on the edges.
- Cool completely before slicing into squares.
