Instructions
- Begin by cutting the chicken into bite-sized pieces and chopping the onion.
- In a large skillet or pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent (about 3-4 minutes).
- Stir in the minced garlic and ginger, cooking for another minute until fragrant.
- Sprinkle in the curry powder, turmeric, and cumin, stirring to combine. Allow the spices to toast for about 1 minute to release their flavors.
- Add the chicken pieces to the pot, season with salt and pepper, and cook until browned (about 5-7 minutes).
- Pour in the coconut milk and chicken broth. Bring the mixture to a simmer.
- Once simmering, stir in the jasmine rice, ensuring it is well combined with the sauce.
- Cover the pot and let it simmer on low heat for about 15-20 minutes, or until the rice is cooked and has absorbed the liquid.
- Gently fold in the frozen peas during the last few minutes of cooking, allowing them to warm through.
- Taste and adjust with more salt or pepper if needed.
- Once everything is cooked through, remove from heat, and let it sit for a few minutes before serving to enhance the flavors.
