Instructions

  1. Begin by cutting the chicken into bite-sized pieces and chopping the onion.
  2. In a large skillet or pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent (about 3-4 minutes).
  3. Stir in the minced garlic and ginger, cooking for another minute until fragrant.
  4. Sprinkle in the curry powder, turmeric, and cumin, stirring to combine. Allow the spices to toast for about 1 minute to release their flavors.
  5. Add the chicken pieces to the pot, season with salt and pepper, and cook until browned (about 5-7 minutes).
  6. Pour in the coconut milk and chicken broth. Bring the mixture to a simmer.
  7. Once simmering, stir in the jasmine rice, ensuring it is well combined with the sauce.
  8. Cover the pot and let it simmer on low heat for about 15-20 minutes, or until the rice is cooked and has absorbed the liquid.
  9. Gently fold in the frozen peas during the last few minutes of cooking, allowing them to warm through.
  10. Taste and adjust with more salt or pepper if needed.
