Description

Ingredients

  • 60 ml extra virgin olive oil
  • 7 ml rice vinegar
  • 7 ml sesame oil
  • 15 ml soya sauce
  • 7 ml grated fresh ginger
  • 22 ml honey
  • 78 mini sweet bell peppers (mixed colors), sliced into rings
  • 4 Persian cucumbers, sliced
  • 60 ml sesame ginger dressing
  • 1530 ml chili oil
  • 1015 ml everything but the bagel seasoning

Instructions

  1. In a small bowl, whisk together olive oil, rice vinegar, sesame oil, soya sauce, grated ginger, and honey until well combined.
  2. Add sliced bell peppers and cucumbers to a mixing or serving bowl.
  3. Pour the prepared dressing over the vegetables, add chili oil, and sprinkle with everything but the bagel seasoning.
  4. Toss gently to combine.
  5. Adjust chili oil and bagel seasoning to taste.
  6. Serve immediately or chill until ready to serve.

Notes

  • This salad is best enjoyed fresh but can be refrigerated for up to 24 hours.
  • The Persian cucumbers are the star, offering a consistently crisp texture and sweeter flavor without bitterness.
