- 2 pounds boneless pork shoulder
- 1/2 cup sour orange juice
- 6 cloves garlic
- 1 tablespoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon black pepper
- 2–3 inches vegetable oil
Instructions
- Marinate the Pork: In a large bowl, combine the pork cubes, sour orange juice, mashed garlic paste, oregano, cumin, and black pepper. Toss well to coat the pork. Cover and let it marinate in the fridge for at least 1 hour or overnight for best flavor.
- Prepare for Cooking: Remove the pork chunks from the marinade and pat dry with a paper towel to ensure a crispy finish. Discard the marinade.
- Heat Oil: In a large saucepan, heat 2-3 inches of vegetable oil over medium heat until very hot but not smoking.
- Brown the Pork: In batches, add the pork chunks to the pan. Cook until beautifully browned on all sides, approximately 5 minutes.
- Cook Thoroughly: Reduce heat to medium-high and continue cooking until the pork is fully cooked and crispy, around 10 minutes more.
- Drain and Serve: Use a slotted spoon to transfer the pork chunks to a plate lined with paper towels to drain excess oil. Serve immediately with fresh lime wedges.
