- 1 large egg (whisked for a beautiful golden finish)
- 17 ounces Grated coconut in syrup (adds sweetness and moisture)
- 1/3 cup water (to create simple syrup)
- 1/3 cup granulated sugar (balances the richness of coconut)
Instructions
- Preheat your oven to 400ºF and line a cookie sheet with parchment paper.
- Prepare the first pastry sheet by unfolding it and slicing into 9 even squares.
- Spoon 1-2 tablespoons of grated coconut onto each pastry square.
- Layer the second pastry sheet on top of the coconut-filled squares.
- Brush an egg wash on top of each pastry and bake for 25-30 minutes or until golden brown.
- Combine granulated sugar and water in a saucepan, bring to a boil, then simmer for 2 minutes; cool.
- Remove pastries from the oven, cool slightly, brush with simple syrup, and serve warm.
