  • 17 ounces Grated coconut in syrup (adds sweetness and moisture)
  • 1/3 cup water (to create simple syrup)
  • 1/3 cup granulated sugar (balances the richness of coconut)

Instructions

  1. Preheat your oven to 400ºF and line a cookie sheet with parchment paper.
  2. Prepare the first pastry sheet by unfolding it and slicing into 9 even squares.
  3. Spoon 1-2 tablespoons of grated coconut onto each pastry square.
  4. Layer the second pastry sheet on top of the coconut-filled squares.
  5. Brush an egg wash on top of each pastry and bake for 25-30 minutes or until golden brown.
  6. Combine granulated sugar and water in a saucepan, bring to a boil, then simmer for 2 minutes; cool.
  7. Remove pastries from the oven, cool slightly, brush with simple syrup, and serve warm.
