Instructions

  1. Season your short ribs generously with salt and pepper on all sides.
  2. Sear the ribs in a large skillet over medium heat for about 20 seconds on each side.
  3. Combine all ingredients in your crockpot, ensuring the short ribs are among the vegetables.
  4. Set the cooker to low and let it cook for 8 hours.
  5. Remove the short ribs and vegetables, discarding the bay leaf and thyme sprigs.
  6. Serve with buttery mashed sweet potatoes, drizzled with cooking liquid.
