Instructions
- Season your short ribs generously with salt and pepper on all sides.
- Sear the ribs in a large skillet over medium heat for about 20 seconds on each side.
- Combine all ingredients in your crockpot, ensuring the short ribs are among the vegetables.
- Set the cooker to low and let it cook for 8 hours.
- Remove the short ribs and vegetables, discarding the bay leaf and thyme sprigs.
- Serve with buttery mashed sweet potatoes, drizzled with cooking liquid.
