Ingredients

  • 1 pound sweet potatoes (peeled and shredded)
  • 0.5 small onion (finely grated)
  • 1 small garlic clove (minced)
  • 0.25 cup all-purpose flour
  • 0.5 tsp garlic powder
  • 1 tsp kosher salt
  • 1 large egg (acting as a binder)
  • 0.25 cup olive oil (for frying)
  • 0.75 cup honey Greek yogurt
  • 0.5 tsp ground cinnamon (for sprinkling)

Instructions

  1. Shred the sweet potatoes and onion, then place them in a thin dishtowel. Squeeze out as much moisture as you can.
  2. Add the mixture to a bowl along with minced garlic, egg, flour, garlic powder, and salt. Stir until just combined.
  3. Form the mixture into patties—six large or ten smaller ones. They should be slightly flat with scraggly edges.
  4. Warm a large skillet over medium heat. Add olive oil and let it shimmer.
  5. To check if the oil is ready, add a tiny amount of the potato mixture; if it sizzles, you’re good to go! Carefully add the latkes.
  6. Cook the latkes for about 4-5 minutes on each side until crispy and golden brown.
  7. Once done, remove the latkes from the oil and let them drain on paper towels.
  8. While frying, whisk together honey Greek yogurt and ground cinnamon in a small bowl.
