- 1 pound sweet potatoes (peeled and shredded)
- 0.5 small onion (finely grated)
- 1 small garlic clove (minced)
- 0.25 cup all-purpose flour
- 0.5 tsp garlic powder
- 1 tsp kosher salt
- 1 large egg (acting as a binder)
- 0.25 cup olive oil (for frying)
- 0.75 cup honey Greek yogurt
- 0.5 tsp ground cinnamon (for sprinkling)
Instructions
- Shred the sweet potatoes and onion, then place them in a thin dishtowel. Squeeze out as much moisture as you can.
- Add the mixture to a bowl along with minced garlic, egg, flour, garlic powder, and salt. Stir until just combined.
- Form the mixture into patties—six large or ten smaller ones. They should be slightly flat with scraggly edges.
- Warm a large skillet over medium heat. Add olive oil and let it shimmer.
- To check if the oil is ready, add a tiny amount of the potato mixture; if it sizzles, you’re good to go! Carefully add the latkes.
- Cook the latkes for about 4-5 minutes on each side until crispy and golden brown.
- Once done, remove the latkes from the oil and let them drain on paper towels.
- While frying, whisk together honey Greek yogurt and ground cinnamon in a small bowl.
