Crispy Sichuan Pepper Chicken Wings for Flavor Lovers
Ingredients

- 2 tbsp Ginger (minced)
- 2 tbsp Garlic (minced)
- 1 tsp Salt
- 1 tsp Sugar
- 2 tbsp Mirin
- 2 tbsp Sake
- 1 tbsp Sesame Oil
- 1 cup Potato Flour
- 1 tbsp Sichuan Peppercorns (roughly ground)
- 2 cups Vegetable Oil
Instructions
- In a bowl, combine ginger, garlic, salt, sugar, mirin, sake, and sesame oil. Toss with chicken wings and let them marinate for 30 minutes.
- Roughly grind the Sichuan peppercorns and mix with potato flour in a large bowl. Add the marinated wings and coat them well using your hands.
- Warm the vegetable oil in a pot until it reaches 160°C. Carefully lower in the chicken wings, frying in batches if necessary. Fry for about 5 minutes, until golden brown.
- Using a slotted spoon, remove the wings and place them on paper towels to drain excess oil. Allow them to cool for a few minutes before serving.
