Ingredients

  • 2 tbsp Garlic (minced)
  • 1 tsp Salt
  • 1 tsp Sugar
  • 2 tbsp Mirin
  • 2 tbsp Sake
  • 1 tbsp Sesame Oil
  • 1 cup Potato Flour
  • 1 tbsp Sichuan Peppercorns (roughly ground)
  • 2 cups Vegetable Oil

Instructions

  1. In a bowl, combine ginger, garlic, salt, sugar, mirin, sake, and sesame oil. Toss with chicken wings and let them marinate for 30 minutes.
  2. Roughly grind the Sichuan peppercorns and mix with potato flour in a large bowl. Add the marinated wings and coat them well using your hands.
  3. Warm the vegetable oil in a pot until it reaches 160°C. Carefully lower in the chicken wings, frying in batches if necessary. Fry for about 5 minutes, until golden brown.
  4. Using a slotted spoon, remove the wings and place them on paper towels to drain excess oil. Allow them to cool for a few minutes before serving.
