Savory Crispy Pork Dragon Noodles with Broccolini Delight


Ingredients

  • 1 cup low-sodium soy sauce
  • 1/4 cup light brown sugar
  • 1 tablespoon minced fresh ginger
  • 1 tablespoon minced fresh garlic
  • 1 tablespoon sambal oelek (adjust to taste)
  • 1 tablespoon toasted sesame oil
  • 1 bunch broccolini
  • spray avocado oil spray (for roasting)
  • 1 teaspoon garlic powder (to taste)
  • 2 pinches kosher salt
  • 2 tablespoons avocado oil (for cooking)
  • 1 pound ground pork
  • 1/2 cup cashews (toasted)
  • 2 packages instant ramen noodles
  • 2 tablespoons green onions (sliced)

Instructions

  1. Bring a pot of water to a boil while preheating your oven to 400°F (200°C).
  2. In a bowl or liquid measuring cup, whisk together the soy sauce, brown sugar, ginger, garlic, sambal oelek, and sesame oil.
  3. Line a rimmed baking sheet with foil and spray it with avocado oil. Arrange the broccolini on the pan, then spray again and season with kosher salt and garlic powder.
  4. Roast the broccolini for 10 to 12 minutes, or until tender and slightly caramelized.
  5. Heat avocado oil in a large wok over medium-high heat. Add ground pork and cook for 8 to 10 minutes until browned.
  6. Add chopped cashews to the pan and toast for about 2 minutes.
  7. Cook the ramen noodles in boiling water according to package directions, usually for 2 to 3 minutes.
  8. Pour the prepared sauce into the pan with pork and cashews, stirring until slightly thickened.
  9. Drain the noodles and add them with roasted broccolini to the pork and cashew mixture. Toss well to coat.
  10. Divide the noodles among bowls and sprinkle with sliced green onions.
