Instructions
- Heat approximately 3 inches of vegetable oil in a deep pot to 350°F (175°C).
- In a medium bowl, whisk together the pancake mix, egg, and milk until smooth. The batter should be thick enough to coat the marshmallows.
- Dip each marshmallow into the batter, ensuring it is evenly coated. Shake off excess batter.
- Carefully lower the coated marshmallows into the hot oil. Fry for 30-60 seconds, turning occasionally, until golden brown and crispy.
- Remove the fried marshmallows with a slotted spoon and drain on paper towels. Serve immediately with desired toppings.
