  • 4 pieces Boneless Skinless Chicken Breasts
  • 2 tablespoons Olive Oil
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper
  • 8 ounces Goat Cheese
  • 2 tablespoons Mayonnaise
  • 1/2 cup Sun Dried Tomatoes, diced
  • 2 cloves Garlic, minced
  • 1 teaspoon Dried Basil
  • 1 cup Panko Bread Crumbs
  • 1 teaspoon Red Pepper Flakes (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with foil and spray with non-stick spray.
  2. Place chicken breasts between plastic wrap and pound to about 1/4 inch thickness.
  3. In a mixing bowl, combine goat cheese, mayonnaise, sun-dried tomatoes, garlic, basil, salt, and pepper until blended.
  4. Spread filling over each chicken breast, roll tightly, and place seam-side down on the baking sheet.
  5. Drizzle chicken rolls with olive oil and season with salt and pepper. Bake for 15 minutes.
  6. Mix panko bread crumbs with a bit of mayonnaise and basil for the topping.
  7. Remove chicken from the oven, top with the panko mixture, and bake for another 10-15 minutes until golden brown and cooked through (internal temperature 165°F).
  8. Let the chicken rest for 5 minutes before serving.
