  • 250 grams Digestive Biscuits
  • 100 grams Butter, melted

  • 500 grams Cream Cheese, full-fat
  • 150 grams Caster Sugar
  • 200 grams Sour Cream, full-fat
  • 2 teaspoons Vanilla Extract
  • 1 gram Pinch of Salt
  • 3 large Eggs
  • For the Topping:
  • 50 grams Granulated Sugar

Instructions

  1. Prepare the crust by blending the digestive biscuits into fine crumbs. Mix with melted butter and press firmly into the bottom of a 9” springform pan.
  2. In a mixing bowl, beat the cream cheese until smooth. Gradually mix in the caster sugar, sour cream, vanilla extract, and a pinch of salt until well combined and silky.
  3. Slowly add the beaten eggs into the cream cheese mixture, stirring gently to combine. Avoid overmixing to prevent incorporating too much air.
  4. Pour the filling onto the prepared crust. Place the springform pan on a foil-lined baking sheet. Bake at 160°C (325°F) for 50-60 minutes, or until the edges puff slightly and the center has a slight jiggle.
  5. Let the cheesecake cool in the pan for about 10 minutes. Transfer it to the fridge and chill for at least 4 hours, preferably overnight, to set properly.
  6. Just before serving, evenly sprinkle granulated sugar over the top of the cheesecake. Use a blow torch or a grill to caramelize the sugar until it’s a golden brown.
  7. Optional: Garnish with fresh berries for added color and flavor.
