  • 1 cup Heavy Cream or Half-and-Half
  • 9 ounces Cheese Tortellini
  • 2 cups Kale, chopped (substitute with spinach)
  • 1/4 cup Fresh Basil, chopped (optional)
  • 1/2 cup Grated Parmesan, for serving (optional)

Instructions

  1. In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned, breaking it into bite-sized pieces for about 5-7 minutes.
  2. Add the diced onion, cooking for 1 minute, then incorporate the carrots and celery. Season with kosher salt and pepper, and cook for about 5 minutes until slightly softened.
  3. Stir in the minced garlic, tomato paste, and Italian seasoning mix, cooking for another minute.
  4. Incorporate the canned crushed tomatoes and low-sodium chicken stock. Bring to a boil, then reduce the heat and let it simmer for about 10 minutes.
  5. Add the heavy cream, tortellini, and chopped kale. Cook according to the tortellini package instructions until al dente, about 2 minutes for fresh tortellini.
  6. If desired, stir in chopped fresh basil before serving. Serve with grated Parmesan on the side.
