  • 2 cups Baby spinach
  • 4 large Burrito-size flour tortillas

Instructions

  1. Season the chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat. Add the chicken and sear on each side for about 4 minutes until cooked through and juicy. Transfer the chicken to a cutting board to rest.
  2. Sauté the sliced onions in the same skillet, tossing occasionally until golden and tender, approximately 5 minutes. Transfer to a bowl and set aside.
  3. Mix the rice, cilantro, and lime juice in a medium bowl. Stir to combine and set aside for assembly.
  4. Dice the resting chicken into ½-inch cubes.
