- 6 to 8 garlic cloves, peeled
- 2 tablespoons olive oil
- Salt and pepper to taste

- 225g (½ pound) dried pasta
- ½ cup whole-milk ricotta cheese
- ½ cup reserved pasta water
- ¼ cup grated Parmesan cheese
- 1 tablespoon butter (optional)
- Fresh basil leaves, for garnish
- Grilled chicken or cooked ground beef (optional)
Instructions
- Preheat oven to 400°F (200°C). Toss halved cherry tomatoes and garlic cloves with olive oil, salt, pepper, and oregano on a baking sheet. Roast for 25-30 minutes until tomatoes are blistered and garlic is tender. Squeeze roasted garlic from skin if roasted whole.
- While tomatoes roast, cook pasta in salted boiling water until al dente. Reserve ½ cup pasta water before draining.
- In a large bowl, combine ricotta cheese, roasted tomatoes, and roasted garlic. Gently smash garlic. Stir in ¼ cup reserved pasta water to create a sauce, adding more as needed for desired consistency.
- Add cooked pasta to the sauce and toss to coat evenly. Stir in Parmesan cheese and butter, if using. Adjust seasoning.
- If adding protein, toss grilled chicken or cooked ground beef with the pasta.
- Garnish with fresh basil leaves and serve with extra Parmesan.
