Instructions
- Preheat your oven to 450°F. Start by butterflying your pork loin with a lengthwise cut about a third of the way from the bottom. Be sure to stop about 1 inch from the other end. After opening the loin like a book, make a second cut on the thick side, again stopping 1 inch from the edge. Lightly pound the meat to an even thickness of about ⅓ inch.
- Season both sides of the pork loin generously with kosher salt and black pepper. Lay cooked bacon strips neatly on top. In a small bowl, combine cream cheese and ranch seasoning. Spread this delicious mixture over the bacon, then layer on shredded cheddar cheese and chopped jalapeños.
