Ingredients

  • 6 oz Diced pancetta
  • 1 medium Sweet onion
  • 2 cloves Garlic cloves
  • 1 tsp Kosher salt
  • 1 tsp Black pepper
  • 1/2 cup Chopped sun dried tomatoes
  • 1/2 cup Dry white wine
  • 1 cup Heavy cream
  • 1 lb Uncooked gnocchi
  • 1/2 cup Parmesan cheese
  • 1/4 cup Fresh basil
  • 1 tsp Cracked black pepper

Instructions

  1. Heat a large skillet over medium-low heat. Add the diced pancetta and cook until it starts to render its fat, about 3-4 minutes.
  2. Stir in the diced onion and minced garlic. Cook until the onions turn soft and the pancetta becomes crispy, about 6-8 minutes.
  3. Add the chopped sun-dried tomatoes and cook for 5 minutes. Season with kosher salt and pepper.
  4. Pour in the white wine to deglaze the pan, scraping up any bits stuck to the bottom.
  5. Add the heavy cream and bring to a simmer, blending the flavors.
  6. Stir in the uncooked gnocchi. Cover and cook for 5 minutes, stirring once or twice.
  7. Taste the gnocchi; if firm, cook for another 1-2 minutes.
  8. Once done, stir in the parmesan cheese, adjusting with more cream if desired.
  9. Serve topped with fresh basil and cracked black pepper.
