- 6 oz Diced pancetta
- 1 medium Sweet onion
- 2 cloves Garlic cloves
- 1 tsp Kosher salt
- 1 tsp Black pepper
- 1/2 cup Chopped sun dried tomatoes
- 1/2 cup Dry white wine
- 1 cup Heavy cream
- 1 lb Uncooked gnocchi
- 1/2 cup Parmesan cheese
- 1/4 cup Fresh basil
- 1 tsp Cracked black pepper
Instructions
- Heat a large skillet over medium-low heat. Add the diced pancetta and cook until it starts to render its fat, about 3-4 minutes.
- Stir in the diced onion and minced garlic. Cook until the onions turn soft and the pancetta becomes crispy, about 6-8 minutes.
- Add the chopped sun-dried tomatoes and cook for 5 minutes. Season with kosher salt and pepper.
- Pour in the white wine to deglaze the pan, scraping up any bits stuck to the bottom.
- Add the heavy cream and bring to a simmer, blending the flavors.
- Stir in the uncooked gnocchi. Cover and cook for 5 minutes, stirring once or twice.
- Taste the gnocchi; if firm, cook for another 1-2 minutes.
- Once done, stir in the parmesan cheese, adjusting with more cream if desired.
- Serve topped with fresh basil and cracked black pepper.
