Instructions

- Season cod fillets with salt and black pepper.

- Add heavy cream and chicken broth to the skillet, bring to a simmer.

- Add sun-dried tomatoes and Italian seasoning; simmer for 3-4 minutes to thicken.
- Mix in baby spinach and cook until just wilted, about 2 minutes.
- Return cod fillets to the skillet, spoon sauce over them, and simmer for 3-4 minutes until heated through.
- Adjust seasoning to taste before serving.
