Instructions

  1. In a large pot, heat the olive oil and butter over medium heat. Add the diced onion, celery, and carrot. Sauté for 5-7 minutes until softened.

  6. Reduce the heat to low and slowly stir in the heavy cream. Allow it to heat through but do not let it boil.
  7. For a smoother bisque, use an immersion blender to blend a portion of the soup for a creamier texture while leaving some chunks for added heartiness.
  8. Taste and adjust the seasoning if necessary, adding more salt or pepper as desired.
  9. Remove from heat and let the bisque sit for a few minutes before serving. This resting time helps enhance the flavors.
