- 1 tablespoon Olive Oil
- 4 pieces Chicken Breast Fillets
- to taste Salt
- 14 ounces Mushrooms
- 2 teaspoons Butter
- 1 piece French Shallot
- ½ cup Champagne or Sparkling White Wine
- 2/3 cup Milk or Heavy Cream
- 1 teaspoon Cornstarch
- a pinch Fresh Parsley
Instructions
- In a skillet, warm 1 tablespoon of olive oil over medium heat. Season each chicken fillet with a pinch of salt and sear for about 3-5 minutes on both sides until golden brown. Transfer to a plate.
- In the same pan, add 2 teaspoons of butter and fry the 14 ounces of mushrooms for another 3-5 minutes until softened. Transfer to the plate with the chicken, covering to keep warm.
- Add finely chopped shallot to the pan and cook for 4 minutes, stirring occasionally. Pour in ½ cup of champagne, scraping bits from the pan for flavor. Season with salt and pepper, simmer for about 10 minutes.
- Stir in 2/3 cup of milk (or heavy cream) and simmer for 2-3 minutes. If using milk, dissolve 1 teaspoon of cornstarch in a tablespoon of water and add to the pan. Mix well until the sauce thickens slightly.
- Add chicken and mushrooms back into the pan with any cooking juices. Coat in the creamy sauce, sprinkle with fresh parsley, and serve warm.
