Description
This hearty potato soup has become my go-to comfort meal throughout the colder months. The combination of smoky kielbasa and creamy potatoes creates a rich, satisfying bowl that warms you from the inside out.

- 2 tablespoons olive oil
- 12 ounces kielbasa, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 4 large Russet potatoes, cubed
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Heat olive oil in a large Dutch oven over medium heat. Add kielbasa and cook until golden brown, about 5 minutes. Remove and set aside.
- Add onion to the pot and cook until translucent, about 3-4 minutes. Stir in garlic and cook for an additional minute.
- Pour in chicken broth, scraping up browned bits from the bottom of the pot.
- Add potatoes, carrots, celery, thyme, and parsley. Bring to a gentle boil, then reduce heat and simmer for 20 minutes.
- Pour in heavy cream and return kielbasa to the pot. Simmer for 5 more minutes.
- Taste and adjust seasoning with salt and pepper before serving.
Notes
- This soup is gluten-free.
- It can be made ahead and tastes better the next day.
- Freezes well for up to 3 months.
