This hearty potato soup has become my go-to comfort meal throughout the colder months. The combination of smoky kielbasa and creamy potatoes creates a rich, satisfying bowl that warms you from the inside out.


Ingredients

  • 2 tablespoons olive oil
  • 12 ounces kielbasa, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 4 large Russet potatoes, cubed
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large Dutch oven over medium heat. Add kielbasa and cook until golden brown, about 5 minutes. Remove and set aside.
  2. Add onion to the pot and cook until translucent, about 3-4 minutes. Stir in garlic and cook for an additional minute.
  3. Pour in chicken broth, scraping up browned bits from the bottom of the pot.
  4. Add potatoes, carrots, celery, thyme, and parsley. Bring to a gentle boil, then reduce heat and simmer for 20 minutes.
  5. Pour in heavy cream and return kielbasa to the pot. Simmer for 5 more minutes.
  6. Taste and adjust seasoning with salt and pepper before serving.
