- 2 tablespoons Olive Oil
- 4 pieces Chicken Thighs and Legs
- 1 teaspoon Salt
- 2 pieces Shallots
- 2 stalks Rib Celery
- 3 sprigs Thyme
- 3 cloves Garlic
- 150 grams Bacon Lardons
- 0.5 cup Brandy or Whiskey
- 2 tablespoons Flour
- 2 cups Chicken Stock
- 1 cup Hard Dry Apple Cider
- 2 pieces Apples
- 0.5 cup Double Cream
Instructions
- Preheat your oven to 180°C (350°F).
- Pat the chicken dry with paper towels, season with salt, and brown in olive oil for 5-7 minutes, skin-side down.
- Cook the bacon lardons in the same dish for 4-5 minutes until crispy, then remove them while leaving the fat in the pan.
- Sauté the shallots and celery for 5-7 minutes until softened; add the thyme leaves.
- Incorporate minced garlic and cook for an additional 30 seconds until fragrant.
- Deglaze the pan with brandy, simmering for 1-2 minutes to evaporate the alcohol.
- Sprinkle in the flour and cook for 1 minute, then gradually mix in the chicken stock and cider until thickened and smooth.
- Return the chicken and bacon back into the dish, cover, and bake for 30 minutes.
- Uncover and bake for another 30 minutes to crisp the chicken skin.
- Fry apple wedges in the reserved bacon fat for 5-7 minutes until golden.
- Stir in double cream and the fried apples before serving.
