Instructions
- In a microwave-safe bowl, melt 1 cup of semisweet chocolate chips, stirring until smooth.
- In a mixing bowl, beat the softened butter and sugar together until crumbly, about 2 minutes. Add the room temperature egg whites and vanilla extract, mixing well. Stir in the melted chocolate until combined.
- In a large bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add this dry mixture to the butter mixture, alternating with 1/4 cup water. Stir until fully combined, and then gently fold in the remaining 1 cup of chocolate chips.
- Cover the dough and refrigerate for about 2 hours, until it’s set and easy to handle.
- Preheat your oven to 350°F. Once chilled, scoop the dough and shape it into 1-inch balls. Roll each ball in confectioners’ sugar for a delightful snowy finish, then place them 2 inches apart on greased baking sheets.
- Bake for 10-12 minutes, until the edges are set and the tops have crinkled. Remove from the oven and let the cookies cool on wire racks.
