- 1/2 cup unsweetened cocoa powder
- 1 3/4 cup all-purpose flour
- 3/4 cup granulated sugar
- 1 1/2 tsp baking powder
- 3/4 tsp baking soda
- 1 pinch salt
- 1 cup buttermilk
- 2 eggs
- 1/2 cup canola oil
- 1 1/2 tsp vanilla extract
- 3/4 cup semisweet chocolate chips, divided
- 1/4 cup heavy whipping cream
- 1/4 cup semisweet chocolate chips
Instructions
- Grease and flour a 9×5-inch loaf pan and preheat your oven to 350°F.
- In a large bowl, whisk together the cocoa powder, all-purpose flour, granulated sugar, baking powder, baking soda, and a pinch of salt.
- Add the eggs, buttermilk, canola oil, and vanilla extract to the dry mixture. Stir until smooth.
- Gently fold in 1/2 cup of the semisweet chocolate chips.
- Pour the batter into the prepared pan and bake for one hour, or until a toothpick inserted in the center comes out clean.
- Cool the bread in the pan for 10 minutes and then transfer it to a cooling rack.
- For the ganache, place 1/4 cup chocolate chips in a small bowl. Bring the heavy cream to a simmer and pour it over the chocolate chips. Stir until smooth.
- Pour the ganache over the completely cooled bread.
