Enjoy these flavorful mini tostadas featuring chipotle lime grilled shrimp and a creamy corn guacamole topping, perfect for any gathering.
Ingredients
- 1 pound Shrimp, deveined and peeled
- 1 tablespoon Chipotle seasoning
- 2 tablespoons Lime juice, freshly squeezed
- 2 tablespoons Olive oil, for marinating
- 2 ears Grilled corn, charred
- 1 cup Cotija cheese, or feta if desired
- 2 medium Avocados, ripe
- 1/4 cup Cilantro, chopped
- 2 cups Small tortilla chips
- 2 tablespoons Olive oil, for frying if homemade
- 1 teaspoon Sea salt, for seasoning
Instructions
- In a bowl, combine the deveined shrimp with chipotle seasoning, lime juice, and olive oil. Let them marinate for about 15 minutes.
- Preheat your grill over medium-high heat. Grill the shrimp for 2-3 minutes per side, or until they turn pink and opaque.
- While the shrimp are grilling, add fresh corn to the grill. Cook until slightly charred, about 8-10 minutes, then remove from heat and let it cool.
- In a large bowl, mash the ripe avocado and mix in the grilled corn, cotija cheese, and chopped cilantro. Season with salt and lime juice to taste.
- Take your small tortilla chips and spoon one tablespoon of the corn guacamole onto each chip. Top with a grilled shrimp.
Notes
- For a vegetarian option, substitute the shrimp with grilled tofu or summer veggies.
- Serve assembled tostadas immediately for best texture.
