Ingredients

Scale
  • 1/2 cup butter (softened for a creamy texture)
  • 3/4 cup brown sugar (packed for that deep caramel flavor)
  • 2 tbsp granulated sugar (adds a touch of sweetness to balance the richness)
  • 1 large egg (at room temperature for better mixing)
  • 2 tsp vanilla extract (enhances the overall flavor profile)
  • 1 1/4 cup flour (provides structure to these delightful cookies)
  • 1/2 cup dutch processed cocoa powder (infuses a rich chocolate taste into the batter)
  • 1/2 tsp baking soda (helps the cookies achieve that lovely rise)
  • 1/4 tsp salt (elevates the sweetness and balances flavors)
  • 1/2 cup semi-sweet chocolate chips (adds melty pockets of chocolate delight)
  • 3 tbsp butter (softened, unsalted to ensure creamy frosting)
  • 4 oz cream cheese (provides a rich, tangy balance to the mint)
  • 1/4 tsp mint extract (delivers that refreshing mint flavor)
  • 1/2 cup powdered sugar (sweetens while giving the frosting its fluffy texture)
  • 1/3 cup semi-sweet chocolate chips (melts into a rich and decadent topping)
  • 3 tbsp heavy cream (creates a smooth, luxurious consistency)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Cream together the butter, brown sugar, and granulated sugar until light and creamy. Mix in the egg and vanilla until fully combined.
  3. Combine the flour, cocoa powder, baking soda, and salt; stir until incorporated. Gently fold in the chocolate chips.
  4. Scoop out 9 cookie dough balls (about 1/4 cup each) and place them 2 inches apart on the baking sheet.
  5. Press down lightly on each cookie to flatten them to about 1 inch thick. Bake for 10 minutes until edges set.
  6. Cool the cookies on the sheet for about 10 minutes before transferring to a cooling rack.
  7. Melt the chocolate chips and heavy cream together in a microwave-safe bowl, heating in 30-second increments until silky.
  8. Cream the butter and cream cheese until soft and smooth. Add the mint extract and powdered sugar; whip until fluffy.
  9. Frost each cooled cookie with the mint frosting and drizzle on the chocolate ganache.
