  • 1 can (14.5 oz) Diced Tomatoes

  • 1 cup Sour Cream
  • 1 cup Cooked Rice
  • 1 cup Frozen Corn
  • 2 cups Shredded Chicken
  • 1 cup Monterey Jack Cheese

Instructions

  1. Preheat oven to broil. Place poblano peppers on a baking sheet and broil for 3 minutes per side until blistered and charred.
  2. Reduce oven temperature to 350°F.
  3. Heat olive oil in a skillet over medium heat. Add diced onion and sauté until soft, about 5 minutes.
  4. Add crushed garlic, chili powder, cumin, dried cilantro, paprika, and salt. Cook for 1 minute until fragrant.
  5. Stir in diced tomatoes and simmer for 2 minutes.
  6. Lower heat and add lime juice, sour cream, cooked rice, frozen corn, and shredded chicken. Heat through.
  7. Fold in 1 cup of cheese.
  8. Slice roasted poblanos lengthwise and remove seeds.
  9. Fill each pepper with the chicken mixture and top with remaining cheese.
  10. Place stuffed peppers on the baking sheet and bake at 350°F for 15-17 minutes.
  11. Broil for an additional 1-2 minutes for a bubbly cheese topping, watching closely.
