Delicious Chicken Salad Stuffed Avocado for a Fresh Twist

- 2 cups Rotisserie chicken (shredded)
- 1/4 cup Diced red onion
- 1/2 cup Diced celery
- 1/4 cup Minced fresh parsley
- 1/2 cup Mayo
- 1/4 cup Sour cream
- 2 tablespoons Fresh squeezed lime juice
- 1 teaspoon Salt
- 1/2 teaspoon Fresh cracked black pepper
- 2 large Ripe avocados (halved and pitted)
- 1 tablespoon Lime juice (for preventing browning)
- 1/2 teaspoon Salt
- 1/4 teaspoon Paprika
- 1/4 teaspoon Chili powder
Instructions
- Shred the chicken by taking apart the rotisserie chicken and picking out all the tender meat.
- Mix the salad by adding the shredded chicken, diced red onion, diced celery, minced parsley, mayo, sour cream, lime juice, salt, and pepper in a large bowl.
- Prepare the avocados by cutting them in half, removing the pits, and scooping out some flesh while leaving the skins intact.
- Stabilize the avocados by making a thin slice at the bottom of each half.
- Season the avocados by rubbing them with lime juice, sprinkling salt, paprika, and chili powder.
- Fill each avocado half with about one-third cup of the chicken salad mixture, packing it gently.
