Description

Ingredients

  • 2 large chicken breasts (300g/10oz each), halved horizontally (or 4 boneless thighs)
  • ½ tsp cooking/kosher salt
  • ½ tsp black pepper
  • ¼ cup plain/all-purpose flour
  • 2 tbsp olive oil
  • 2 tbsp (30g) unsalted butter
  • 2 eschalots (or ½ small onion), finely chopped
  • 1 garlic clove, minced
  • 2 cups white mushrooms, sliced
  • 1 cup dry Marsala wine
  • ½ cup low-sodium chicken broth
  • ½ cup heavy/thickened cream (or evaporated milk for lighter version)
  • ¼ tsp salt
  • ⅛ tsp black pepper
  • 1 tbsp chopped parsley (optional, for garnish)

Instructions

  1. Prepare the Chicken: Slice each chicken breast in half horizontally. Pound to even thickness (1 cm / 0.4″). Season with salt and pepper. Lightly coat with flour, shaking off excess.
  2. Pan-Fry the Chicken: Heat 1 tbsp oil and 1 tbsp butter in a large non-stick skillet over medium-high heat. Cook chicken for 3–4 minutes on one side until golden and crispy, then 2 minutes on the other. Remove and set aside.
  3. Make the Sauce: In the same pan, add remaining oil and butter. Sauté eschalots and garlic for 1 minute. Add mushrooms and cook for 3–4 minutes until softened.
  4. Reduce the Marsala: Pour in Marsala wine and simmer on high for 3 minutes or until reduced by half to cook off the alcohol.
  5. Finish the Sauce: Add chicken broth, cream, salt, and pepper. Lower the heat and simmer 3–5 minutes until the sauce thickens to a creamy consistency.
  6. Warm the Chicken: Return the chicken to the pan and simmer for 1 minute to reheat. Spoon sauce over to coat.
  7. Serve: Serve hot over mashed potatoes, pasta, polenta, or crusty bread. Garnish with parsley if desired.

  • For a lighter version, use evaporated milk instead of heavy cream.
