- 1 cup couscous
- 1 ¼ cups chicken broth (or water)
- 2 cooked chicken breasts, shredded or diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, finely chopped
- 1 bell pepper (any color), diced
- ¼ cup fresh parsley, chopped
- ¼ cup feta cheese, crumbled (optional)
- 1 lemon, juiced
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a medium saucepan, bring the chicken broth (or water) to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for about 5 minutes until the couscous absorbs the liquid.
- After the couscous has cooled slightly, fluff it with a fork to separate the grains and let it cool completely.
- While the couscous cools, chop the cherry tomatoes, cucumber, red onion, and bell pepper. Set them aside.
- In a large mixing bowl, add the shredded or diced chicken to the cooled couscous.
- Add the prepared vegetables and parsley to the bowl.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and gently toss everything until well coated.
- If desired, sprinkle the salad with feta cheese for added flavor. Toss gently to combine.
- Taste the salad and adjust the seasoning with additional salt and pepper if needed.
- For optimal flavor, let the salad chill in the refrigerator for at least 30 minutes before serving.
