  • 2 cooked chicken breasts, shredded or diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced

  • 1 bell pepper (any color), diced
  • ¼ cup fresh parsley, chopped
  • ¼ cup feta cheese, crumbled (optional)
  • 1 lemon, juiced
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, bring the chicken broth (or water) to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for about 5 minutes until the couscous absorbs the liquid.
  2. After the couscous has cooled slightly, fluff it with a fork to separate the grains and let it cool completely.
  3. While the couscous cools, chop the cherry tomatoes, cucumber, red onion, and bell pepper. Set them aside.
  4. In a large mixing bowl, add the shredded or diced chicken to the cooled couscous.
  5. Add the prepared vegetables and parsley to the bowl.
  6. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  7. Pour the dressing over the salad and gently toss everything until well coated.
  8. If desired, sprinkle the salad with feta cheese for added flavor. Toss gently to combine.
  9. Taste the salad and adjust the seasoning with additional salt and pepper if needed.
  10. For optimal flavor, let the salad chill in the refrigerator for at least 30 minutes before serving.
