  • ¼ cup grilled chicken breast (sliced)
  • 23 slices deli ham
  • 4 slices of Swiss or Provolone cheese
  • 2 tablespoons toasted breadcrumbs
  • 2 tablespoons melted butter
  • 2 tablespoons butter (for sauce)
  • 1 tablespoon flour (for sauce)
  • 1 cup milk (for sauce)
  • 1 chicken bouillon cube (for sauce)
  • 1 tablespoon Dijon mustard (for sauce)
  • Dash hot sauce (optional, for sauce)
  • ½ cup freshly grated Parmesan cheese (for sauce)
  • Salt to taste (for sauce)
  • Pepper to taste (for sauce)

Instructions

  1. To make the Parmesan Dijon sauce, melt 2 tablespoons butter in a medium sized saucepan.
  2. Whisk in 1 tablespoon flour and add 1 chicken bouillon cube, then cook for 1-2 minutes.
  3. Slowly add 1 cup milk while whisking.
  4. Add 1 tablespoon Dijon mustard and a dash of hot sauce (optional).
  5. Continue cooking and whisking for about 5 minutes or until the sauce has thickened.
  6. Remove the sauce from heat and add ½ cup freshly grated Parmesan cheese, then stir until combined. Keep the sauce warm over low heat.
  7. To make the Chicken Cordon Bleu quesadilla, melt 2 tablespoons butter in a large skillet over medium heat.
  8. Add one flour tortilla shell to the skillet.
  9. Add one layer of sliced Swiss or Provolone cheese.
  10. Add a layer of deli ham.
  11. Sprinkle with toasted breadcrumbs.
  12. Add another layer of Swiss or Provolone cheese.
  13. Add a layer of sliced grilled chicken breast.
  14. Drizzle with a couple spoonfuls of the Parmesan Dijon sauce.
  15. Sprinkle with more toasted breadcrumbs.
  16. Add a final layer of Swiss or Provolone cheese.
  17. Top with another flour tortilla shell.
  18. Cook until the bottom tortilla is golden brown.
  19. Flip the Chicken Cordon Bleu quesadilla and continue to cook until the other side is golden brown.
  20. Cut the Chicken Cordon Bleu quesadillas into slices and serve with the remaining Parmesan Dijon sauce.

Notes

  • Be sure to cook your Chicken Cordon Bleu quesadilla over medium heat. If your heat is too hot, the quesadilla will be golden brown before the cheese is melted and the fillings are warmed through.
  • Store-bought breaded chicken may be used instead of adding breadcrumbs to your Chicken Cordon Bleu quesadilla.
