Ingredients
- 1 lb Boneless Chicken Thigh/Breast (or swap for beef or seafood)
- 2 tbsp Light Soy Sauce
- 0.5 tsp Baking Soda
- 8 oz Flat Rice Noodles (Fresh/Boiled)
- 1 tbsp Sesame Oil
- 2 tbsp Oyster Sauce
- 1 tbsp Dark Soy Sauce
- 1 tbsp Sugar
- 1 tbsp Rice Vinegar
- 2 tbsp Water
- 1 tbsp Ginger (finely chopped)
- 3 cloves Garlic (finely chopped)
- 1 medium Red Bell Pepper (thinly sliced)
- 1 medium Green Bell Pepper (thinly sliced)
- 4 stalks Spring Onions (cut into 2” pieces)
- 1 cup Bean Sprouts
- 2 tbsp Vegetable Oil
Instructions
- Cut boneless chicken into thin slices. Marinate with light soy sauce and baking soda for 10 minutes.
- Combine sauce ingredients: sesame oil, oyster sauce, dark soy sauce, sugar, rice vinegar, and water. Set aside.
- Preheat a pan over medium heat. Add chopped garlic and ginger; stir-fry until fragrant.
- Add marinated chicken to the pan. Stir-fry for 1-2 minutes until golden brown.
- Add flat rice noodles and the sauce mixture. Stir well for 1 minute.
- Fold in sliced red and green bell peppers; cook for 1 minute.
- Add bean sprouts and spring onions; stir-fry for another minute until crisp.
- Remove from heat and transfer Chicken Chow Fun to a serving plate.
