Ingredients

- 2.5 Tbsp Butter (divided)
- 6 pieces Chicken thighs (bone-in, skin-on)
- Salt (to taste)
- Pepper (to taste)
- 2 Tbsp Flour (divided)
- 2 pieces Shallots (sliced or chopped)
- 8 oz Mushrooms (sliced)
- 4 cloves Garlic (finely chopped)
- 0.5 cup White wine
- 0.25 cup Cognac
- 1 Tbsp Fresh tarragon (finely chopped)
- 1 Tbsp Fresh parsley (finely chopped)
- 1.5 cups Chicken stock
- 0.5 cup Crushed tomatoes
Instructions
- Preheat oven to 400°F.
- Season the chicken thighs with salt and pepper, then dust with 1 Tbsp of flour. In a large skillet, heat 1.5 Tbsp of butter over medium-high heat. Sear the chicken for about 6-7 minutes per side until golden brown, then transfer to a plate.
- In the same skillet, remove excess fat and sauté the sliced shallots for a minute. Add the sliced mushrooms and sauté for about 3-4 minutes until softened. Add the finely chopped garlic and sauté for another minute.
- Pour in the white wine and stir to deglaze the pan, scraping up any bits. Cook for 3-4 minutes. Then add the cognac along with fresh tarragon and parsley.
- Pour in the chicken stock and crushed tomatoes, stirring to combine. Let simmer for about 10 minutes.
- Nestle the chicken thighs back into the sauce, skin-side up. Place the skillet in the oven and bake uncovered for 30 minutes.
- Mix the remaining 1 Tbsp of butter with 1 Tbsp of flour to form a paste. Stir this into the sauce and return to the oven for an additional 15-20 minutes, until the chicken reaches 185°F.
- Garnish with freshly chopped parsley and serve alongside crusty warm bread or mashed potatoes.
