Ingredients

  • 2.5 Tbsp Butter (divided)
  • 6 pieces Chicken thighs (bone-in, skin-on)
  • Salt (to taste)
  • Pepper (to taste)
  • 2 Tbsp Flour (divided)
  • 2 pieces Shallots (sliced or chopped)
  • 8 oz Mushrooms (sliced)
  • 4 cloves Garlic (finely chopped)
  • 0.5 cup White wine
  • 0.25 cup Cognac
  • 1 Tbsp Fresh tarragon (finely chopped)
  • 1 Tbsp Fresh parsley (finely chopped)
  • 1.5 cups Chicken stock
  • 0.5 cup Crushed tomatoes

Instructions

  1. Preheat oven to 400°F.
  2. Season the chicken thighs with salt and pepper, then dust with 1 Tbsp of flour. In a large skillet, heat 1.5 Tbsp of butter over medium-high heat. Sear the chicken for about 6-7 minutes per side until golden brown, then transfer to a plate.
  3. In the same skillet, remove excess fat and sauté the sliced shallots for a minute. Add the sliced mushrooms and sauté for about 3-4 minutes until softened. Add the finely chopped garlic and sauté for another minute.
  4. Pour in the white wine and stir to deglaze the pan, scraping up any bits. Cook for 3-4 minutes. Then add the cognac along with fresh tarragon and parsley.
  5. Pour in the chicken stock and crushed tomatoes, stirring to combine. Let simmer for about 10 minutes.
  6. Nestle the chicken thighs back into the sauce, skin-side up. Place the skillet in the oven and bake uncovered for 30 minutes.
  7. Mix the remaining 1 Tbsp of butter with 1 Tbsp of flour to form a paste. Stir this into the sauce and return to the oven for an additional 15-20 minutes, until the chicken reaches 185°F.
  8. Garnish with freshly chopped parsley and serve alongside crusty warm bread or mashed potatoes.
