Ingredients

  • 4 chicken thighs, boneless and skinless
  • 1 cup soy sauce
  • ½ cup mirin
  • ½ cup sake
  • ¼ cup brown sugar
  • 4 cloves garlic, crushed
  • 1-inch piece of ginger, sliced
  • 3 green onions, chopped
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil (for searing)

Instructions

  1. Pat the chicken thighs dry with paper towels. This helps in obtaining a good sear.
  2. In a large skillet, heat vegetable oil over medium-high heat.
  3. Add the chicken thighs to the hot skillet and sear for about 3-4 minutes on each side, or until golden brown. Remove and set aside.
  4. In a separate pot, combine soy sauce, mirin, sake, brown sugar, garlic, ginger, and half of the chopped green onions.
  5. Heat the sauce mixture over medium heat until it begins to simmer, stirring to dissolve the sugar.
  6. Return the seared chicken thighs to the pot with the sauce. Ensure they are submerged in the liquid.
  7. Cover the pot with a lid, letting it cook for about 1.5 hours on low heat, flipping the chicken halfway through.
  8. After cooking, remove the chicken and place it on a cutting board. Allow it to cool for 15 minutes.
  9. If desired, continue cooking the sauce uncovered for 10-15 minutes to thicken.
  10. Once cooled, slice the chicken thighs into rounds or strips.
  11. Drizzle the reduced sauce over the sliced chicken for added flavor.
