- 4 chicken thighs, boneless and skinless
- 1 cup soy sauce
- ½ cup mirin
- ½ cup sake
- ¼ cup brown sugar
- 4 cloves garlic, crushed
- 1-inch piece of ginger, sliced
- 3 green onions, chopped
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil (for searing)
Instructions
- Pat the chicken thighs dry with paper towels. This helps in obtaining a good sear.
- In a large skillet, heat vegetable oil over medium-high heat.
- Add the chicken thighs to the hot skillet and sear for about 3-4 minutes on each side, or until golden brown. Remove and set aside.
- In a separate pot, combine soy sauce, mirin, sake, brown sugar, garlic, ginger, and half of the chopped green onions.
- Heat the sauce mixture over medium heat until it begins to simmer, stirring to dissolve the sugar.
- Return the seared chicken thighs to the pot with the sauce. Ensure they are submerged in the liquid.
- Cover the pot with a lid, letting it cook for about 1.5 hours on low heat, flipping the chicken halfway through.
- After cooking, remove the chicken and place it on a cutting board. Allow it to cool for 15 minutes.
- If desired, continue cooking the sauce uncovered for 10-15 minutes to thicken.
- Once cooled, slice the chicken thighs into rounds or strips.
- Drizzle the reduced sauce over the sliced chicken for added flavor.
