  • 4 cups green cabbage
  • 1 cup matchstick carrots
  • 1 cup broccoli florets
  • 1 medium red bell pepper
  • 1 medium onion
  • 1 cup shiitake mushrooms
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon toasted sesame oil
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 2 tablespoons toasted sesame seeds
  • 2 tablespoons coconut aminos
  • 1 tablespoon fresh ginger
  • 1 teaspoon crushed red pepper flakes
  • 1 tablespoon arrowroot starch
  • 3 cloves garlic cloves

Instructions

  1. In a bowl, combine coconut aminos, chicken broth, ginger, garlic, arrowroot starch, and crushed red pepper flakes. Whisk until smooth and set aside.
  2. In a large skillet, heat olive oil and toasted sesame oil over medium-high heat.
  3. Season chicken breasts with salt and black pepper. Sear in hot oil for about 3 minutes per side, until golden brown.
  4. Transfer the chicken to a plate and let it rest.
  5. Add chopped bell pepper, onion, and broccoli to the skillet. Sauté for about 4 minutes until slightly tender.
  6. Toss in cabbage, matchstick carrots, and shiitake mushrooms. Season with salt and pepper, sauté for another 3 minutes.
  7. Pour the prepared sauce over the vegetables. Toss together and cook for about 4 minutes until sauce thickens.
  8. Slice seared chicken, return to skillet, and sprinkle with sesame seeds. Adjust seasoning if needed.
