- 1 pound boneless skinless chicken breasts
- 4 cups green cabbage
- 1 cup matchstick carrots
- 1 cup broccoli florets
- 1 medium red bell pepper
- 1 medium onion
- 1 cup shiitake mushrooms
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1 tablespoon toasted sesame oil
- 2 tablespoons olive oil
- 1 cup chicken broth
- 2 tablespoons toasted sesame seeds
- 2 tablespoons coconut aminos
- 1 tablespoon fresh ginger
- 1 teaspoon crushed red pepper flakes
- 1 tablespoon arrowroot starch
- 3 cloves garlic cloves
Instructions
- In a bowl, combine coconut aminos, chicken broth, ginger, garlic, arrowroot starch, and crushed red pepper flakes. Whisk until smooth and set aside.
- In a large skillet, heat olive oil and toasted sesame oil over medium-high heat.
- Season chicken breasts with salt and black pepper. Sear in hot oil for about 3 minutes per side, until golden brown.
- Transfer the chicken to a plate and let it rest.
- Add chopped bell pepper, onion, and broccoli to the skillet. Sauté for about 4 minutes until slightly tender.
- Toss in cabbage, matchstick carrots, and shiitake mushrooms. Season with salt and pepper, sauté for another 3 minutes.
- Pour the prepared sauce over the vegetables. Toss together and cook for about 4 minutes until sauce thickens.
- Slice seared chicken, return to skillet, and sprinkle with sesame seeds. Adjust seasoning if needed.
