This easy cheesy taco rice is quick to make, family-friendly, and perfect for busy weeknights. Serve it as a main dish or use it as a hearty filling for burritos, stuffed peppers, or taco bowls.
Ingredients
- 1 pound ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning or 2 tablespoons homemade taco seasoning
- 1 cup long grain white rice
- 2 cups beef broth or water
- 1 can diced tomatoes with green chilies, undrained
- 1 cup corn, frozen or canned and drained
- 1 ½ cups shredded cheddar or Mexican blend cheese
- Salt and pepper to taste
- Chopped green onions or cilantro for garnish (optional)
Instructions
- In a large skillet over medium heat, cook the ground beef and onion until the beef is browned and the onion is softened. Drain excess grease if needed.
- Add the garlic and taco seasoning, stirring to coat the meat evenly. Cook for 1 minute to release the flavors.
- Stir in the rice, beef broth, diced tomatoes with green chilies, and corn. Bring to a simmer.
- Reduce heat to low, cover, and cook for 18 to 20 minutes, or until the rice is tender and the liquid is absorbed. This creates a delicious taco flavored rice dish.
- Remove from heat and stir in most of the cheese, saving a little for topping. This makes the creamy taco rice skillet extra cheesy.
- Sprinkle remaining cheese over the top, cover, and let sit for a few minutes until the cheese melts.
- Garnish with chopped green onions or cilantro if desired before serving this Mexican cheesy rice recipe.
Notes
- You can swap ground beef for ground turkey or plant-based meat for a lighter or vegetarian option, making it a healthy cheesy taco rice.
- Adjust the heat by using mild or hot diced tomatoes with chilies for a spicy cheesy taco rice.
- For extra toppings, try sour cream, avocado, or crushed tortilla chips.
- Leftovers reheat well and are great for lunch the next day or rolled into burritos for an easy second meal. This quick cheesy taco rice meal is perfect for meal prep.
- This simple cheesy taco rice dinner is kid-friendly cheesy taco rice.
