Cheesy Taco Potatoes Bake: 1 Secret for Epic Flavor

  • Author: Fatima Garcia
  • Total Time: 55 min
  • Yield: 6 Servings 1x
  • Diet: Gluten Free

Description

This crowd-pleasing dish combines crispy roasted potato cubes with savory taco-seasoned ground beef, all smothered in melted cheese. The potatoes are roasted until golden and crisp, then topped with perfectly seasoned beef and a generous layer of cheddar or Mexican blend cheese. After a quick trip back to the oven for that irresistible cheese melt, it’s ready for customization with toppings like sour cream, green onions, jalapeños, salsa, or guacamole. It’s a hearty, satisfying meal that brings together the best of taco flavors with comforting potatoes.

Ingredients

Scale
  • 450g lean ground beef
  • 46 medium Russet potatoes, scrubbed and cubed
  • 28g taco seasoning blend
  • 120ml water
  • 180g shredded cheddar cheese or Mexican blend cheese
  • 15ml olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Sour cream (optional)
  • Chopped green onions (optional)
  • Sliced jalapeños (optional)
  • Salsa (optional)
  • Guacamole (optional)

Instructions

  1. Set the oven to 220°C and prepare a baking sheet with parchment paper or light grease.
  2. Dice Russet potatoes into bite-sized cubes, maintaining the skin if desired. Toss with olive oil, salt, and pepper, then arrange in a single layer on the prepared baking sheet.
  3. Roast potatoes for 25–30 minutes, turning halfway, until golden and crisp at the edges.
  4. Brown the ground beef in a skillet over medium heat, breaking up any large pieces. Drain off excess fat.
  5. Stir in taco seasoning with 120ml water. Simmer for 5 minutes until the mixture thickens.
  6. Transfer roasted potatoes to an oven-safe dish or leave on the sheet. Distribute seasoned beef evenly over the potatoes and cover generously with shredded cheese.
  7. Return the assembled dish to the oven for 5–7 minutes, or until cheese is melted and bubbling.
  8. Add desired toppings such as sour cream, green onions, jalapeños, salsa, or guacamole. Serve immediately while hot.
