Description

Delightful Cauliflower Casserole with Cheddar Cheese & Corn, a creamy and nutritious dish that warms your heart.


Ingredients

  • 1 large head Cauliflower
  • 2 cups Frozen Corn
  • 2 tablespoons Butter
  • 1 tablespoon All-Purpose Flour
  • 1 cup Milk
  • 1.5 cups Cheddar Cheese (shredded)
  • to taste Salt
  • to taste Pepper

Instructions

  1. Preheat your oven to 350 degrees F.
  2. Boil a large pot of water and add the cauliflower. Boil for 5 minutes, adding frozen corn in the last minute. Drain and place in a baking dish.
  3. Melt butter in a saucepan over medium-high heat. Stir in flour until smooth and bubbly.
  4. Combine milk and 1/2 cup shredded cheddar into the saucepan. Stir until melted and sauce thickens.
  5. Pour cheese sauce over veggies, mix well. Season with salt and pepper. Sprinkle remaining cheddar over the top.
  6. Bake for 30 minutes. Optional: broil for 2-3 minutes for a golden crust.

Notes

  • Feel free to mix in pepper jack cheese for added flavor.
  • You can substitute frozen corn with fresh corn if available.
