- 1 large head Cauliflower
- 2 cups Frozen Corn
- 2 tablespoons Butter
- 1 tablespoon All-Purpose Flour
- 1 cup Milk
- 1.5 cups Cheddar Cheese (shredded)
- to taste Salt
- to taste Pepper
Instructions
- Preheat your oven to 350 degrees F.
- Boil a large pot of water and add the cauliflower. Boil for 5 minutes, adding frozen corn in the last minute. Drain and place in a baking dish.
- Melt butter in a saucepan over medium-high heat. Stir in flour until smooth and bubbly.
- Combine milk and 1/2 cup shredded cheddar into the saucepan. Stir until melted and sauce thickens.
- Pour cheese sauce over veggies, mix well. Season with salt and pepper. Sprinkle remaining cheddar over the top.
- Bake for 30 minutes. Optional: broil for 2-3 minutes for a golden crust.
Notes
- Feel free to mix in pepper jack cheese for added flavor.
- You can substitute frozen corn with fresh corn if available.
