  • 2 tablespoons Avocado Oil
  • 4 tablespoons Butter
  • 1 medium Shallot
  • 1 tablespoon Apple Cider Vinegar
  • 2 tablespoons Stone Ground Mustard
  • 1 cup Heavy Cream
  • 1 cup Chicken Stock

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix garlic powder, salt, dried rosemary, cracked black pepper, and dried thyme in a small bowl.
  3. Pat the pork loin dry with paper towels and coat it thoroughly with the spice mixture.
  4. Heat avocado oil in a cast iron skillet over medium heat and sear the pork loin on all sides for 2-3 minutes each.
  5. Transfer the skillet to the preheated oven.
  6. Cook the pork loin for about 25 minutes, until it reaches an internal temperature of 150°F (65°C).
  7. Remove the pork from the skillet and cover with foil. Allow to rest for 10 minutes.
  8. Reduce heat to medium-low and melt the butter in the skillet.
  9. Sauté minced shallots for 2-3 minutes until translucent. Add apple cider vinegar and cook for one minute.
  10. Whisk in heavy cream, chicken stock, and stone ground mustard.
  11. Simmer for 2-3 minutes until thickened.
  12. Serve sliced pork with the shallot cream sauce drizzled on top.
