  • 4 cups Vegetable broth
  • 1/2 teaspoon Black pepper
  • 1 tablespoon Maple syrup
  • 1/2 cup Coconut milk

Instructions

  1. Heat the oil in a large pot over medium heat until shimmering.
  2. Add chopped yellow onion, season with sea salt and black pepper, and sauté until softened, about 8 minutes.
  3. Stir in smashed garlic cloves and chopped carrots, cooking for another 8 minutes.
  4. Add freshly grated ginger, apple cider vinegar, and vegetable broth, bringing to a gentle boil before simmering for about 30 minutes.
  5. Allow the soup to cool slightly before blending until smooth, adjusting consistency with water if necessary.
  6. Serve warm, optionally garnished with a drizzle of coconut milk.
