- 300g pasta of your choice (spaghetti, fettuccine, or penne)
- 2 large onions, thinly sliced
- 3 tablespoons olive oil
- 1 teaspoon sugar
- Salt, to taste
- Black pepper, to taste
- 1 teaspoon red pepper flakes (adjust to preference)
- 2 tablespoons chilli oil
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional, for serving)
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.
- In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the sliced onions and sprinkle with sugar and a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes, or until the onions are golden brown and caramelized.
- Once the onions are caramelized, add black pepper and red pepper flakes to the skillet. Stir well to combine and cook for an additional 2 minutes to enhance the flavors.
- Add the cooked pasta to the skillet with the caramelized onions. Toss everything together, adding reserved pasta water gradually until the desired sauce consistency is achieved.
- Drizzle the chilli oil over the pasta and toss to coat evenly. Taste and adjust seasoning with extra salt and pepper if needed.
Notes
- This dish can be garnished with fresh parsley for added flavor.
