Cantonese White Cut Poached Chicken is a simple yet flavorful dish that highlights the natural taste of chicken.

- 1 whole chicken (3–4 lbs)
- 2 liters water
- 3 slices of ginger
- 3 stalks of green onions
- 3 tablespoons soy sauce (for dipping)
- 1 tablespoon sesame oil (for drizzling)
- Salt, to taste
- Fresh cilantro, for garnish
Instructions
- Clean the chicken under cold water. Pat it dry with paper towels.
- In a large pot, bring the 2 liters of water to a boil.
- Once boiling, add the ginger slices and green onions to the pot.
- Gently lower the whole chicken into the simmering water. Allow it to poach for 30 minutes.
- Make sure the chicken is fully cooked by checking that the juices run clear when pierced at the thickest part.
- Carefully lift the chicken from the pot and place it onto a cutting board. Allow it to rest for about 10 minutes.
- In a small bowl, mix soy sauce and sesame oil for a simple dipping sauce.
- Slice the chicken into serving pieces, ensuring you keep the skin on for flavor.
- Arrange the pieces on a serving platter and garnish with fresh cilantro.
- Offer the dipping sauce alongside the chicken for a delightful eating experience.
