Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 bell pepper, chopped (any color)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup chicken broth
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. In a bowl, combine the shrimp with Cajun seasoning. Mix well until the shrimp are evenly coated.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add the chopped onion and bell pepper to the skillet. Sauté for about 3-4 minutes, or until soft.
  4. Stir in minced garlic and cook for an additional 1-2 minutes until fragrant.
  5. Add the seasoned shrimp to the skillet. Sauté for 3-4 minutes, stirring occasionally, until shrimp are pink and cooked through.
  6. Toss in cherry tomatoes and corn. Stir well to combine.
  7. Add chicken broth to the skillet. Allow to simmer for 3-5 minutes to let flavors meld.
  8. Taste and season with salt and pepper if needed.
  9. Remove from heat and sprinkle with chopped parsley.
  10. Plate the dish with lemon wedges on the side for a fresh squeeze of citrus.
