Cajun Shrimp Skillet for an Amazing Ultimate Dinner

- 1 pound large shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 bell pepper, chopped (any color)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels (fresh or frozen)
- 1/2 cup chicken broth
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- In a bowl, combine the shrimp with Cajun seasoning. Mix well until the shrimp are evenly coated.
- In a large skillet, heat olive oil over medium-high heat.
- Add the chopped onion and bell pepper to the skillet. Sauté for about 3-4 minutes, or until soft.
- Stir in minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the seasoned shrimp to the skillet. Sauté for 3-4 minutes, stirring occasionally, until shrimp are pink and cooked through.
- Toss in cherry tomatoes and corn. Stir well to combine.
- Add chicken broth to the skillet. Allow to simmer for 3-5 minutes to let flavors meld.
- Taste and season with salt and pepper if needed.
- Remove from heat and sprinkle with chopped parsley.
- Plate the dish with lemon wedges on the side for a fresh squeeze of citrus.
