- 8 ounces linguine or fettuccine pasta
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup cherry tomatoes, halved
- 1 cup bell peppers, sliced (red and green)
- ½ cup green onions, sliced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving about ½ cup of pasta water.
- In a large bowl, combine the shrimp with Cajun seasoning, salt, and pepper. Toss to coat evenly.
- In a large skillet, heat olive oil over medium heat. Add the seasoned shrimp and cook for 2-3 minutes, turning halfway until they are pink and opaque. Remove shrimp from the skillet and set aside.
- In the same skillet, add garlic, bell peppers, and cherry tomatoes. Sauté for about 3-4 minutes, until the vegetables are tender.
- Pour in the heavy cream, stirring continuously. Let it simmer for about 2-3 minutes until slightly thickened.
- Return the shrimp to the skillet, adding the drained pasta. Toss to coat everything in the sauce. If the pasta seems dry, add a bit of reserved pasta water.
- Gently mix in sliced green onions, reserving a few for garnish.
- Taste and adjust seasoning as needed. Remove from heat and garnish with chopped parsley and lemon wedges.
