  • 8 ounces linguine or fettuccine pasta
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, sliced (red and green)
  • ½ cup green onions, sliced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving about ½ cup of pasta water.
  2. In a large bowl, combine the shrimp with Cajun seasoning, salt, and pepper. Toss to coat evenly.
  3. In a large skillet, heat olive oil over medium heat. Add the seasoned shrimp and cook for 2-3 minutes, turning halfway until they are pink and opaque. Remove shrimp from the skillet and set aside.
  4. In the same skillet, add garlic, bell peppers, and cherry tomatoes. Sauté for about 3-4 minutes, until the vegetables are tender.
  5. Pour in the heavy cream, stirring continuously. Let it simmer for about 2-3 minutes until slightly thickened.
  6. Return the shrimp to the skillet, adding the drained pasta. Toss to coat everything in the sauce. If the pasta seems dry, add a bit of reserved pasta water.
  7. Gently mix in sliced green onions, reserving a few for garnish.
  8. Taste and adjust seasoning as needed. Remove from heat and garnish with chopped parsley and lemon wedges.
