Description
This easy Cajun Chicken Pasta is the ideal one-pan recipe for busy weeknights. Dinner will be ready in 30 minutes with this simple, wholesome dinner.

- 1 tablespoon olive oil
- 1 cup red onion (finely chopped)
- 1 red bell pepper (seeded and finely chopped)
- 1 green bell pepper (seeded and finely chopped)
- 1/2 cup celery (finely chopped)
- 4 cloves garlic (crushed and minced)
- 1 10-ounce can Rotel (drained)
- 2 teaspoons cajun seasoning
- 1 teaspoon each paprika, Italian seasoning, and garlic powder
- 2 cups chicken broth
- 1 cup heavy whipping cream
- 3 cups dry penne pasta
- 1 cup shredded parmesan
- 1 cup cooked chicken
- 1/2 cup heavy whipping cream
- salt and pepper to taste
Instructions
- In a large deep pan or dutch oven heat the olive oil over medium heat.
- Add the chopped onion, bell peppers and celery. Sauté until softened.
- Add the garlic and sauté an additional 30 seconds.
- Add the drained can of tomatoes with green chiles, chicken broth, heavy whipping cream, and spices. Bring the mixture to a simmer. Add the penne pasta, cover, reduce heat to medium low and simmer 6-8 minutes until the pasta is al dente.
- Stir in the parmesan, cooked chicken and heavy whipping cream over low heat. Serve when the chicken is heated through.
