Description

This easy Cajun Chicken Pasta is the ideal one-pan recipe for busy weeknights. Dinner will be ready in 30 minutes with this simple, wholesome dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 cup red onion (finely chopped)
  • 1 red bell pepper (seeded and finely chopped)
  • 1 green bell pepper (seeded and finely chopped)
  • 1/2 cup celery (finely chopped)
  • 4 cloves garlic (crushed and minced)
  • 1 10-ounce can Rotel (drained)
  • 2 teaspoons cajun seasoning
  • 1 teaspoon each paprika, Italian seasoning, and garlic powder
  • 2 cups chicken broth
  • 1 cup heavy whipping cream
  • 3 cups dry penne pasta
  • 1 cup shredded parmesan
  • 1 cup cooked chicken
  • 1/2 cup heavy whipping cream
  • salt and pepper to taste

Instructions

  1. In a large deep pan or dutch oven heat the olive oil over medium heat.
  2. Add the chopped onion, bell peppers and celery. Sauté until softened.
  3. Add the garlic and sauté an additional 30 seconds.
  4. Add the drained can of tomatoes with green chiles, chicken broth, heavy whipping cream, and spices. Bring the mixture to a simmer. Add the penne pasta, cover, reduce heat to medium low and simmer 6-8 minutes until the pasta is al dente.
  5. Stir in the parmesan, cooked chicken and heavy whipping cream over low heat. Serve when the chicken is heated through.
